Snow Day

Evan and I are at home today. Most schools were cancelled today because of the Blizzard. I'm totally fine to stay indoors today minus my few take the dog out moments. My pictures don't really do justice to how it really looks outside. As the day has gone on, the winds have picked up. It's gusting at 40-50 mph. Those high of winds combined with fresh powder snowfall have made for an interesting travel day for those that still have to go out and work. Many businesses including banks are starting to close up so you know it's bad out there!


This is one thing Evan did this morning to pass some time. He took in a little Elmo while sitting on his "Elmo" chair.


Evan also found a way to torture me and the dog. I would say the dog disliked this activity the most. Evan was pretty loud, but he was definitely having some fun doing it!

Go Vikings!!

Evan is ready for the game with his Vikings gear on. We will be watching the game and hopefully cheering them on to a win!!


We have a house guest for the next few days. Teddy will be staying with us until Sean's mom Karine comes back to the cold and snow from being in Arizona for a couple of weeks.
Evan is in a stage right now where he wants to be doing everything we are. This morning I was standing on a chair in the kitchen cleaning out a cupboard so he drug his elmo chair over by me and stood on it. Last night Sean replaced a heating cover in our bedroom and had his drill in the house. As soon as Evan saw it he went and found his. Here are a couple of pictures of Sean and Evan "fixing" his chair.




I feel like I'm always fighting a battle to keep the mail from piling up on my kitchen table. So with the help of Sean and the internet I came up with an idea to help with the organization. It's a shoe holder that we haven't used in a very long time. I just cut the top row off and hemmed it and then put letters on it so we know what goes in each slot. I'm hoping it works for us!


I made this yummy egg dish this morning. It is so easy and tasty that I'm going to pass on the recipe for others to try. I got it from my Good Housekeeping magazine this month.

CHILES RELLENOS CASSEROLE
6 lg eggs
1 cup low fat milk
2 Tbsp. all-purpose flour
1/4 tsp. paprika
1/4 tsp. salt
1/2 tsp. pepper
2 cans whole green chiles, drained and thinly sliced
1 medium red pepper cut into 1/4 in. pieces
4 oz. shredded Cheddar cheese
1/4 cup fresh Cilantro finely chopped
1. Preheat over to 350. Grease shallow 2 quart ceramic or glass baking dish.
2. In large bowl, with wire whisk, mix eggs, milk, flour, paprika, salt, pepper until well blended. Stir in chiles, red pepper, cheese, and cilantro; pour into prepared dish.
3. Bake casserole 35 to 40 minutes or until puffed and golden drown and center still jiggles slightly.
4. Cool in casserole in dish on wire rack 10 minutes.
It doesn't make a huge amount so if you plan to make for a large group you might need to make 2 of them.

Sledding

Sean's project this weekend was to build Evan a sledding hill in our backyard. It's now ready to use so we took Evan out this morning and he loved it!


You can see how much snow Sean used to build the hill.



Sean built it using Evan's summer slide toy so he can use it to climb up on the snowhill.

This past Saturday night Sean and I went to his work Christmas party. Sean had some great luck that night and ended up winning a notebook laptop!! Not bad for an evening. The pictures are just some random ones from the past week and 2 weekends ago of Evan opening some of his late Christmas presents. He loves the flashlight and now has the mouse sleep in his crib!
